Pickled Asparagus

Time to get pickling! These Pickled Asparagus are the perfect side dish or snack for any season. Quick and healthy pickled asparagus are easy to make, cute to store in mason jars and they keep for 6 months!

 

  • 2 lbs fresh asparagus
  • 3 cloves of garlic
  • 1 tsp black peppercorns
  • 1 tsp coriander seeds
  • 1 cup white wine vinegar
  • 1 cup water
  • 1 Tbls salt
  • 3 Tbls sugar
  • 2 Tbls horseradish

  1. Clean and trim ends off of asparagus
  2. Blanche in boiling water for 2 minutes
  3. Remove from heat and shock in ice water to cool then drain and let dry
  4. Bring all remaining ingredients to a boil, let cool for 5 minutes, poor liquid over asparagus
  5. Store in  a sealed container in refrigerator. Asparagus will be ready to enjoy in 7 days and will keep for 6 months!
